Cilantro Sunrise Cocktail

When one of my bloggy friends asked me to join a new Monthly Ingredient Challenge group, I immediately said YES! Our first challenge ingredient was cilantro, which happens to be one of my all time favorite ingredients. It took me all of about 2 seconds to decide what I was going to make- a drink! This Cilantro Sunrise Cocktail is a bold and flavorful drink that’s full of fresh ingredients (and of course, lots of tequila).

A traditional Tequila Sunrise is made with tequila, orange juice, and grenadine. That sounds nice, but a bit too tame for my adventurous tastes. I decided to spice it up by adding cilantro, fresh pineapple, mango, and Serrano peppers. That’s right… peppers! Don’t worry, they don’t overwhelm the drink. Instead you’ll find a nice light hint of heat after each sip.

The sweetness of the fresh pineapple and mango offer a nice balance to the cilantro and peppers. The flavors don’t compete with one another,  they all seem to get along together quite well (unlike my two children today). In fact, I think this Cilantro Sunrise Cocktail is just what I need after a weekend of playing referee to my rowdy, cranky, dirt-covered boys!

Cilantro Sunrise Cocktail
 
A sweet and spicy tequila cocktail featuring fresh pineapple, mango, cilantro, and Serrano peppers.

Serves: 1 cocktail
Ingredients
  • 3 TBS fresh mango, chopped
  • ¼ cup fresh pineapple, chopped
  • Handful of fresh organic cilantro, roughly chopped
  • 2 slices of Serrano pepper
  • 1 TBS agave
  • 3 oz tequila
  • ½ lime juiced
Method
  1. Add the mango, pineapple, cilantro, Serrano peppers, and agave into a martini shaker.
  2. Muddle until all ingredients are well combined.
  3. Fill the martini shaker with ice, add the tequila and lime juice.
  4. Give it a good shake, shake, shake and then pour the liquid through a strainer into a glass.
  5. Add ice and garnish with a pineapple wedge. Cheers!

    Cilantro has many health benefits… so why not combine it with something like this. It has to balance it right? )

      I like the way you think Amanda!! Cilantro is very healthy, so adding a little tequila won’t hurt anything right?! :)

    I’m not a big cocktail drinker but the mix of pineapple, mango, lime and cilantro sounds good! I may have to try this in a juice. Thanks so much for the inspiration!

      You could totally make this into a “mocktail”, sans tequila! I think if you increased the amount of pineapple and mango, you could easily get a nice refreshing juice drink with a kick to it.

      I’ve been wanting to do a tequila cocktail with pineapple for awhile, and I thought the cilantro would be the perfect addition :) Luckily it worked out even better than I had expected! Can’t wait for next month’s challenge!
