Who says that eating healthy means you can’t have a little fun along the way? For Day 2 of #EatLean2015 I’m shaking up a special cocktail that’s packed with natural antioxidants and nutrients. The Pomegranate Splash is the perfect drink to unwind with on a Friday night.

The idea for a cocktail using pomegranate seeds came from a recent get together with some of my girlfriends. One of my friends whipped up a delicious drink using pomegranate seeds and I was smitten! Not only did it taste good, but it looked amazing too! Since then, I’ve been taking a quick look for pomegranate seeds every time I hit up the grocery store. Last weekend, I finally hit the jackpot at my local Whole Foods (and they were even on sale- score)! I happily brought them home and with Shaun’s creative genius, we created this cocktail.

The Pomegranate Splash contains both pomegranate seeds and organic 100% pomegranate juice. It’s big on heart healthy nutrients like punicalagin and light on you waistline. White wine, also shown to be heart healthy, is the primary alcohol and is accompanied by splashes of gin and elderflower liqueur. The best part are the little bits of wine soaked pomegranate seeds lingering in the bottom of your glass.
