During this week three years ago, we were sailing the Caribbean seas aboard the beautiful Norwegian Epic. It was a vacation full of great memories- the crystal blue water, the warm island breeze, and the DRINKS. OMG the drinks! There were fruity little drinks with cute umbrellas, frozen pina coladas with fresh pineapple, and everything else you could possibly imagine. But there was one drink that stole the show and kept me company pool side all week long – the mojito.
Though our cruise on the Epic had to come to an end eventually, my new found love of mojitos has continued to grow. The intense freshness of the mint muddled with the crisp, bold, and tart flavor of lime is absolutely amazing. It’s the perfect drink to unwind with after a long day when you need something revitalizing and relaxing.
Fortunately for me, Shaun mixes up a mean mojito! On a recent snowy night he came up with this Grapefruit Mojito to remind us of those sunny days cruising the Caribbean. The tangy, bitter, juiciness of grapefruit offers a new twist on this classic drink. It’s light, bright, and refreshing. A perfect drink to get you through the last few weeks of winter!
Several large sprigs of fresh mint
½ lime, cut into 4 wedges
½ tsp super fine sugar
1 oz Bacardi (or other white rum of your choice)
¼ cup ginger ale (or less, based on your preference)
Juice from half of a grapefruit
Grapefruit slices, for garnish
Begin by placing 2 lime wedges and about 8-10 mint leaves in a large sturdy glass (I like mine in a mason jar). Crush mint and lime together using a muddler. Add the sugar and remaining lime wedges. Use the muddler to crush again. Fill the cup about ¾ of the way with crushed ice, and pour in Bacardi and ginger ale. Stir lightly and then add grapefruit juice. Garnish with mint sprigs and grapefruit wedges. ENJOY!
