By now youve probably noticed two things about me- I love lemons, and I l-o-v-e butter! So for this delicious recipe, Im combining these things to make one tasty breakfast treat. These Lemon Blueberry Muffins are gluten free and made with absolutely no refined sugar, but the real secret to their scrumptiousness is the butter.
Lets talk butter for a sec, shall we?
We all cook with it, bake with it, and thanks to the bulletproof coffee craze, some of us even put it in our morning cup of joe. You probably take for granted what goes into making butter, but just like any other ingredient you consume, its important to know exactly what youre eating. Thats why I was so excited to find Finlandia Butter at my local grocery store!
This is not just any butter. Im talking rich and creamy butter, imported from Finland and made with non-gmo ingredients. Its the perfect butter to bake with and tastes ahh-mazing when spread on your favorite muffin, scone, or toast. Finlandia claims to be the best tasting butter straight up and Id have to agree! After trying Finlandia Butter I was able to taste a real difference in the flavor and texture as compared to the store brand butter. I was instantly hooked on the taste, but after a little research I fell in love with the brand too. Why? Because Finlandia Butter is made with milk from cows that graze on the lush pastures of small family-owned Finnish farms. Theyre treated humanely and never given hormones like rBST- things that matter to me as a mom (and as a butter lover)!
Speaking of being a mom, did I mention that my kids are on spring break this week? Nine whole days of jam-packed, never rest your feet, please dont burn the house down, fun!
Since theyre home, I whipped up these Lemon Blueberry Muffins for breakfast. Its nice to actually have time to sit down and savor a bite of breakfast before heading off on one of our adventures! My kindergartner especially likes these muffins and has even been enjoying them as a little afternoon treat. I like to warm them up, spread on a little Finlandia Butter, and add a drizzle of honey delicious and nutritious (something all moms can appreciate)!
I was originally going to make plain lemon muffins, but then I remembered that we still had some blueberries in the freezer from our trip to Chestertown last summer. Im really glad I added them because the blueberries add just a little pop of tartness that contrasts perfectly with the sweet flavor of the muffin. Any recipe where I can add locally sourced produce and non-gmo ingredients is a winner in my book!

- 1 cup all purpose (gluten free) flour
- 1 tsp baking powder
- ¼ tsp salt
- ½ tsp baking soda
- cup honey, slightly warmed
- 4 TBS Finlandia unsalted butter, melted
- Zest & juice of 1 lemon
- 1 egg, whisked
- 2 TBS vanilla flavored Greek yogurt
- 1 cup fresh blueberries
- Finlandia salted butter for serving
- Preheat your oven to 325*.
- In a large mixing bowl, sift all of the dry ingredients together.
- Then, in a separate bowl, whisk together the warmed honey and the melted Finlandia butter. Add the lemon zest and lemon juice, whisk again to combine.
- Next add the egg and Greek yogurt, stir to combine.
- Carefully add the wet ingredients into the dry, stirring gently to combine.
- Finally, gently fold in the blueberries, be careful not to over mix.
- Spoon the batter into the muffin liners, filling about of the way.
- Bake at 325* for 20-25 minutes.
- Serve warm with a spread of delicious Finlandia butter, enjoy!
